Citrus and Lavender Green Tea Rickey

The martini is overdone. Margaritas are so yesterday. So let’s make a cocktail that will truly impress: a citrus and lavender green tea rickey.

A rickey is a drink made with gin or bourbon, lime, and carbonation. We’re going to up the ante by infusing our gin with lemon, lime, and lavender, and then we’re going to add it to some green tea and top it all off with tonic water.

First, let’s infuse the gin. Don’t worry, it’s easy!

  1. Simply add the zest from one lemon and one lime to a quart Mason jar.
  2. Sprinkle in 3 tablespoons of organic, dried lavender buds, then fill the jar with one liter of your favorite gin.
  3. Put the lid on tightly, give the jar a shake, and let it sit for a few days (3-5 is ideal, but you can do more or less depending on how strong you like it).
  4. When it’s done, strain out the zest and lavender and you have a wonderful infused spirit to use in our cocktail recipe.

If you don’t like gin, you can do this with vodka instead and the results are just as delicious.

Ingredients:

  • 2 oz infused gin
  • 2 oz brewed green tea, cold
  • 1 tablespoon simple syrup
  • Ice
  • Tonic water

Directions:

  1. Add gin, tea, simple syrup and ice to a martini shaker. Cover and shake well.
  2. Strain into glass with more ice and top with tonic water.
  3. Garnish with a twist of lemon or lime.
