When you’re not sure if you want breakfast or lunch, do brunch! These souffles bridge both mealtime worlds with eggs—your AM staple—and Parmesan cheese for the perfect bit of savory. Serve with toast and hash browns or roasted vegetables with hollandaise. And if you climb back into bed with your brunch plate, well, we won’t judge.
Parmesan Souffles with Green Chili Sauce from Krista Bjorn at Rambling Tart
Ingredients:
- 2 large eggs
- 2 tablespoons cream
- 1 tablespoons fresh parsley, chopped
- 1-2 tablespoons freshly grated Parmesan
- Salt and pepper to taste
- Drizzle of green chili sauce
- 2 teaspoons butter, separated
Directions:
- Preheat oven to 375˚F.
- In small bowl, whisk together all ingredients except butter.
- Put one tsp of butter in the bottom of two ramekins.
- Divide batter evenly between ramekins.
- Place in oven and bake 20 minutes until souffles have puffed up and are golden brown on top.
- Serve immediately.
