Spring’s arrival often carries fresh blossoms and celebrations, such as Passover. But if you’re one to bend the rules of tradition just a bit, you might consider combining the matcha trend with a standard matzo bread bite in this recipe for Matcha Matzo. Beyond giving the bread a green hue to match the shades of nature growing outside the window, the green tea powder also offers a unique flavor. This crisp bread bite can be enjoyed on its own, spread with almond butter or even dipped in melted chocolate.
Matcha Matzo Bread
Ingredients
1 cup all-purpose flour
2 teaspoons cooking grade matcha (plus extra matcha for garnish)
1/2 tsp salt
½ tsp sugar
1/2 cup water
Preheat the oven to 475. Line one baking sheet with parchment paper.
Sift the matcha, flour, sugar and salt into a medium bowl and mix. Slowly add the water and mix until a soft dough forms in the shape of a smooth ball (4 minutes). Note that if the dough is sticky, simply add pinches of flour until it comes together. And if it is too dry, add 1 teaspoon of water at a time until the dough is smooth and comes together.
Generously flour the counter and break the dough into small balls (approx the size of an egg). Using a rolling pin, carefully roll out each small ball as thin as possible without tearing. Note that if the dough begins to stick to the rolling pin, lightly dust the dough and pin with flour. Transfer the dough to the parchment lined baking sheet and prick it all over with a fork (which prevents the dough from rising).
Repeat the latter process until you have used all of the dough and filled the baking sheet. Bake for 4-5 minutes, until crisp. Before serving, sprinkle the matcha matzo with matcha for a bright green burst of color (as matcha tends to darken when mix with flour and baked). Please note that this recipe is not kosher.
