Cardamom Rice Pudding

Cardamom adds a special, rich flavor that takes a sometimes ordinary dessert—in this case, rice pudding—to a tasty new level! And it’s easier than you think to make a real show-stopper. Add an egg to give the pudding a luscious, custardy texture that’s still easy on the waistline: a perfectly satisfying, yet light dessert!

Serves 1-2

Ingredients

  • 2 1/4 cups milk
  • 1/4 cup uncooked medium-grain rice
  • 4 packets of Nektar Honey Crystals
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup raisins
  • 1/2 teaspoon vanilla extract

Method

  1. In a medium saucepan, bring the milk, rice, Nektar Honey Crystals, cardamom, and salt to a boil over high heat.
  2. Reduce heat to low and simmer uncovered until the rice is tender, about 20-25 minutes. Stir often so the rice does not stick.
  3. In a small bowl, whisk egg until well mixed. Add a few tablespoons of hot rice mixture to the egg mixture a little at a time to prevent scrambling the egg, mixing constantly.
  4. Then add the egg mixture into the rice and stir over low heat until thick, about 5 minutes. Do not let it boil or the mixture will curdle. Stir in raisins and vanilla and let the raisins soften. Garnish with cardamom.
  5. Serve pudding warm, at room temperature, or chilled.
