Individual Apple Crisps with Oatcake Topping

Look no further for a healthy dessert or even just a guiltless snack done with apples, the flavor king of the season. These apple crisps are tart and tasty without going over your sugar allowance. Served with apple-infused tea, nothing says fall with more deliciousness.

Ingredients

  • 1 teaspoon butter
  • 5 crisp tart apples (MacIntosh, Macoun, Cortland)
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch
  • 1/2 pkg. Effie’s Oatcakes
  • 2 tablespoons melted butter

Method

  1. Pre-heat the oven to 350 degrees.
  2. Butter four 8-ounce ramekins and set aside.
  3. In a bowl, combine the apples, sugar, cinnamon, and lemon juice and toss to mix well. Add the cornstarch and toss to coat. Taste the filling, then add more sugar or lemon juice to taste. Set aside.
  4. In the meantime, place the Oatcakes in the bowl of a food processor and pulse to a coarse crumb. Transfer to a bowl and toss with the melted butter, forming a moist meal.
  5. Pour the apple filling evenly into the buttered dishes and top with the Oatcake topping.
  6. Transfer the ramekins to a sheet pan and bake at 350 degrees for 30 minutes.
  7. Cover the dishes with aluminum foil and continue baking for 15 more minutes or until there are syrupy bubbles oozing to the top.
  8. Cool and serve with a scoop of your favorite vanilla ice cream.
